first post frittata goodness

So, this is the first post of thrifty eats! I happen to be called carol anne and I am working in partnership with my boyfriend, john, who knows a lot more about cooking than I. But my experience combined with his knowledge make for a pretty good gastronomic team, if I do say so myself. And I do.

The actual recipe for this dish from epicurios.com called for 2 cloves of fresh garlic, which we forgot to pick up at the store, so we had to use garlic powder. But, aside from that, the two of us were quite please with the results. So, with out any further a-do:

Arugula and Onion Fritatta with Manchego

Serves Two

1/2 onion, diced finely
4 eggs
1 tbsp olive oil
1 tsp garlic powder
1 cup manchego cheese, grated
salt & pepper, to taste

Preheat broiler.

Cook onions in oil in a 8-inch well-seasoned cast-iron skillet over medium heat, stirring occasionally, until golden, about 2 minutes. Add arugula, then cook, stirring frequently, until wilted, 1 to 2 minutes.

Whisk together eggs, salt, and pepper until combined, then pour over arugula in skillet and cook, undisturbed, over moderate heat until almost set, 5 to 6 minutes. Sprinkle cheese evenly on top and broil 4 to 5 inches from heat until eggs are just set and cheese is melted, 1 to 2 minutes.
